This Strawberry Chia Pudding Parfait is creamy, layered, and packed with flavor, and it comes together in minutes with just a handful of ingredients. Directions

  1. Mix kefir, chia seeds, sweetener, and vanilla.
  2. Let sit for 10 minutes, stir again, then refrigerate 2–4 hours (or overnight).
  3. Layer chia pudding with fresh strawberries and granola.
  4. Finish with a drizzle of kefir on top.

Tips for Success

  • Give the chia seeds a full stir right after mixing, and again after the 10-minute rest. That second stir is what keeps them from clumping together at the bottom instead of setting evenly through the pudding.
  • Don't rush the chill time. Pulling it at 2 hours gives you a looser, more pourable pudding, while letting it sit closer to 4 hours or overnight gets you that thicker, spoonable parfait texture.

Storage & Serving

  • The plain chia pudding, before layering with strawberries and granola, keeps well in the fridge for up to 5 days, so it's an easy one to batch prep for a few breakfasts at once.
  • Wait to add the granola until right before serving, otherwise it'll go soft sitting in the pudding.
  • Sliced strawberries are best added fresh too, rather than stored mixed in ahead of time.
  • This doesn't freeze well, since the pudding's texture changes once thawed.

Why is my chia pudding still runny?

It either needs more chill time, or it wasn't stirred a second time after the initial 10-minute rest to break up any clumped chia seeds. Give it the full 2-4 hours, or overnight, before checking again.

Can I use a different topping instead of granola?

Sliced almonds, coconut flakes, or a drizzle of nut butter all work well here too if you want to switch it up.
