Directions

  1. Cook your frozen fries according to package instructions. Season with salt and pepper.
  2. Cook the soyrizo sausage until warmed through.
  3. Once the fries are cooked add all of your toppings onto the fries.
  4. Pour queso over the fries.
  5. Scoop onto plates, and enjoy!

Tips for Success

  • Spread the fries out in a single layer without overlapping when baking. Crowding them steams the fries instead of crisping them, and crispy fries are what hold up under all the toppings and queso without turning soggy.
  • Warm the queso separately and pour it on right before serving instead of too early. Queso can start to set and thicken as it sits, so timing it to go on last keeps everything melty.

Storage & Serving

  • This is best eaten immediately once assembled — loaded fries don't hold well once the queso and toppings go on, and the fries will soften quickly.
  • If you want to prep ahead, keep the fries, soyrizo, chopped toppings, and queso stored separately, then assemble right before serving.
  • Leftover plain fries (before toppings) keep in the fridge for a day or two and can be re-crisped in the oven or air fryer.
  • Fully assembled leftovers don't reheat well, since the queso and fresh toppings don't hold up to a second round of heat.

Frequently Asked Questions

Can I use regular chorizo instead of soyrizo?

Yes, if you're not looking to keep this vegetarian — cook it the same way until warmed through.

Can I air fry the fries instead of baking them?

Yes — just follow the air fryer instructions on your fries' bag instead of the oven directions, it's usually a bit faster than baking.

Can I use homemade queso instead of store-bought?

Yes, any warm, pourable queso works here in place of the ready-made version.
